todd's pecan pie

Picture
This is the requested and required pie indulgence at Thanksgiving and Christmas.

Two of them. Each holiday, from now until eternity.

It does use corn syrup, which is not so fashionable, but for twice a year, you can splurge a little. Serve warm with whipped cream and hot coffee. What a way to finish dinner. Just exercise a lot afterwards.

Microwave any leftovers (if you are lucky).

3 eggs, slightly beaten
1 cup white sugar
1 cup Karo dark or light corn syrup
2T butter, melted
1t vanilla
1 1/4 pecans, halved
Todd's A+ Pie Crust

Pre-heat oven to 350 degrees. Stir first 5 ingredients until well-blended. Stir in pecans. Pour into an *UNCOOKED* pie crust. Bake 50-55 minutes, or until a knife comes out clean. Cool on  a wire rack. If eating as a leftover, microwave for 15-20 seconds to warm it up (good as new!).
