the plastic baby galette

This is another recipe from my son's food class. Its real name is La Galette de Rois, and it's a traditional Epiphany food. The idea is that there is a small toy baby (or marble) in the dessert and whoever the 'lucky' person is to find it get to be "king for a day"

A friend and I were talking about this and she said, "Oh, is that the cake with the plastic baby in it?" And it just stuck after that.

What in the world is Epiphany? It is the Christian season that starts 12 days after Christmas. Why is this significant? Because that's when the 3 Wise Men actually got to the baby Jesus in Bethlehem. Thus, the Galette de Rois commemorates this event.



4T unsalted butter
1/4 cup sugar
2 eggs
1/3 cup almond paste
1/2 t vanilla
1 package of puff pastry

Blend almond paste, sugar and butter until smooth. Add one egg and vanilla and mix until smooth.

Cut the sheets of puff pastry into a circle by tracing around a springform pan. Put on sheet onto a greased baking sheet or silpat. Spread the almond paste/mix. At this point, you'd put the plastic baby or marble somewhere on the paste, but let's just skip that and say we did.

Layover the other sheet and smush the edges together. Beat the other egg and brush it over. Make criss-cross patterns in the top layer to vent it. Bake at 400 degrees for 25-30 minutes until golden brown and puffy.

NOTES:

1) Add sliced pears with a squeeze of lemon juice?
2) Make individual tarts in a muffin pan, almond paste on the bottom and chopped pears with lemon or maybe cinnnamon dusted on top?
