sweet potato fluff

This is a very deep, almost dessert-like side dish, so it tastes best with a simply baked pork chop or roasted chicken.

2-3 sweet potatoes, any kind as long as they are orange
¼ cup orange juice (approximately)
2-3 T brown sugar
2-3 T butter
Dash of cinnamon
Nutmeg (optional)
Marshmallows
Pecans or walnuts, finely chopped
Dried cranberries (optional)

Boil or microwave sweet potatoes until they are well cooked. Remove skins. Mash until  smooth. Add orange juice, brown sugar, butter and cinnamon. Adjust to your taste. Add nutmeg if you like.

Add egg and mix well. Add cranberries if you want. Top with marshmallows and sprinkle with nuts. Bake at 350 degrees for about 30 minutes until the marshmallows start to brown.
