This is the very first thing that someone actually requested I bring to a potluck.
The Plus One and Plus Two variations are a nice change-up. If you do opt for a fruit variation, be very conservative with the sugar in the dressing. As you can see, the ingredients for the dressing are few and very simple. |
1 bag of spinach
½ of a red onion, thinly sliced into ringlets 1 hard-boiled egg Bleu cheese 6 or so slices of bacon Plus One—If Don’t Like Onions Spinach Strawberries Bleu cheese Pecans, roasted |
Plus Two—If Don’t Like Bleu Cheese
Spinach ½ of a red onion, sliced into ringlets Mandarin orange slices Pecans, roasted Dressing (for all) 1/3 cup vinegar--½ cup balsamic & ½ Japanese 1 dollop of mustard A bit of sugar, to taste Marjoram (fresh or dried) Enough salad oil to combine |
Fry bacon until crisp. Drain, crumble and set aside. Saute red onion in a bit of oil until caramelized. Drain and set aside. Cut hard-boiled eggs length and width-wise with an egg slicer. Combine spinach, onion, bacon, egg and bleu cheese.
Mix dressing ingredients together, except oil Adjust flavor to your taste and then add just enough oil to hold everything together. Toss again with dressing, just enough to coat the salad.
