Yes, yes, I know, “SPAM”?!? And yes, I know it’s not grass-fed, organic anything, but everything in moderation, including Spam, makes eating (and life) a happy experience. 

Thus, this is “special occasion” food in Hawaii. In our house, we make it for Thanksgiving, parties, and if the kids have been especially good. And most importantly, YOU HAVE TO COOK SPAM. Eating it like ice cream, with a spoon straight out of the can, is just plain gross.

3-4 cups white Japanese rice 
 (Remember to use the rice cooker cups)
1 can of Spam
 I use low-sodium or sometimes, hot-n-spicy
About 6 sheets of sushi nori
Spam musubi frame
Upscale Additions (All optional)
Scrambled eggs with green onion
Kim chee
Edo murasaki
Furikake
Shiba zuke

Cook rice in rice cooker. Open the can of Spam, blithely ignore the sucking sound it makes as it drops out, and cut into ¼” slices. Fry spam until crispy on the outside. Drain on paper towels.

Cut nori sheets in half, so the nori’s height will be approximately the same size as the long side of the spam musubi frame. Put shiny side down on a cutting board, or other smooth surface. Put spam musubi frame about 1/3 from the edge of the nori. Put about 1-2 spoonfuls of rice in the musubi frame. Press down flat with some good pressure.

If you want to add any extras, put down a little now. Place the spam on top. Add 1-2 more spoonfuls of rice. Press down flat again, and slowly pull up the musubi frame. Wrap the nori all around and seal by running a wet finger across the edge of the nori. Lay the sealed side down to set the seal.

Using a serrated knife, or a sharp, damp knife, cut in half (length-wise), and then cut in half again. One spam musubi yields 4 spam “sushi”. Makes 8-12 musubi, depending on whether you include add-ons.
Kim Chee Spam Musubi Variation
To make any of the variations on Spam musubi, simply add them on top of the Spam when making musubi.

For kim chee, use the white parts of kim chee. The green parts do not stack as well and hold too much liquid. Some of the kim chee juice will drizzle into the rice as you wrap the nori around it. This is desirable and delicious.
