plum sauce chicken

Leftover chicken? This one is fabulous and best of all, it takes 10 minutes, start to finish.  No leftovers after that. It's one of those great ones you can use with leftover Costco chicken, and if you want to be really fancy, you can use Chinese roast or chicken instead. Great for kids to make.

Leftover chicken, shredded
1 cup of crushed pineapple, drained a little
1/3 cup plum sauce
2T sugar
1T Japanese vinegar
1t red pepper flakes

Drizzle of sesame oil
3 bunches of green onions, finely chopped
1 cucumber, peeled, seeded and chopped and/or a few handfuls of shredded carrots
Honey roasted peanuts, hammered to bits
Mint, chopped (optional)
Cilantro, chopped (optional)
Lettuce leaves

Mix pineapple, sugar, plum sauce, vinegar, pepper and sesame oil in a shallow pan and heat until warm and just about to boil. Add chicken, green onions, and carrots (if you are adding them) and mix til warm. Take off from stove and add cucumbers. Drop a spoonful of chicken onto a lettuce leaf and sprinkle with crushed honey-roasted peanuts. Add mint and/or cilantro if you like.
