peach blueberry cobbler

Summer Yum. We (OK, my daughter and my husband, who are the resident bakers) have made it many times as a breakfast dish, though it would be sublime as a dessert with vanilla ice cream. Peaches, nectarines and apricots work equally well. In all cases, it was gone by the end of the day. My cyber-ohana has also weighed in big-time happiness on this one as well.

It's the best of everything about summer.

VARIATION UPDATE
This is so simple that even I can make a successful variation. Mine was plum/strawberry (see right).

Plum/strawberry variation

4T butter
3/4 cup flour
3/4 cup sugar
3/4 cup milk (non-fat is perfectly fine!)

1t baking powder
1/4 t salt
3 big peaches or nectarines, 4-6 apricots, pitted and sliced (skin on is OK)
1/2 small carton of blueberries

OR
4-6 plums and a handful of strawberries

Melt butter into 8 x 8 baking dish. Mix dry ingredients and add milk. 

The batter will be *very* runny, but don't worry. 

Pour batter into baking dish and scatter the fruit into the batter. It will look like a mess, but don't despair. Bake at 350 degrees for 50-60 minutes. As if by magic, the top will be sticky-crunchy and the bottom will be warm and buttery.

NOTE:
That little 1t of baking powder is vitally important. The texture is just plain icky without it.
