A beloved standby on Hawaii dinner tables—a routine dinner, potlucks, and family holidayss. To gussy it up, add grilled salmon and/or dried apricots.
It works really nicely as a side dish to teriyaki salmon, peanut butter miso chicken, or apricot pork chops.

1 head of cabbage, finely shredded
3-4 stalks of green onion, finely chopped Bag of shredded carrots Slivered almonds, toasted 1 pkg GGE ramen snacks, either the loose ones or the mini-hockey pucks. Note that there are MSG-free versions as a bonus and I'm finding these to be more readily available at Safeway. |
Dressing
A little less than 1/3 cup sugar 1/3 cup white (American) vinegar Black sesame seeds (for color, but white ones are OK too) Black pepper, to taste Canola or Macadamia Nut oil, just enought to hold it together A splash of sesame oil (for fragrance) |
If needed, lightly pound the ramen snacks into discrete small pieces, but not enough to make them a powder. Toss all the salad items together, except the dried ramen noodes. Mix dressing ingredients together. Pour over salad and toss. Add the ramen noodles and toss again.
NOTES:
1) Nissin no longer makes the original orange-packaged pre-flavored dried ramen.
2) I used to toss everything together but the noodles get soggy too quickly if you do that. Best to add it after you have tossed the veggie parts.
3) If you want to keep this salad as a leftover, serve the noodles on the side so they don't go gross and soggy in the fridge.
