my daddy's killer fried rice

My dad never, ever measures. He says this is how his mom made fried rice, and that you can use char siu or spam, but bacon is his preferred salty meat. When I go home, he even makes a special batch without dried shrimp just for me because I'm allergic to shellfish. What a guy!

Cooked rice, long grain if possible, Ideally, leftover refrigerator rice
Bacon, finely chopped
Onion, finely chopped
Oyster sauce

Shoyu
Eggs, scrambled and cut into strips
A few stalks of green onions, finely chopped
Optional Mix-ins
Fresh cilantro, finely chopped
Dried shrimp
Diced carrots
Peas
Green beans, finely chopped

Cook the bacon first. Then add onions, garlic, and carrots, in that order. Then add rice and shoyu. Add whatever else you want (i.e. peas, green beans, green onions, etc.). Add oyster sauce to taste. Add sliced scrambled eggs and cilantro last.

Let the rice at the bottom brown a little and get crunchy. Serve hot with practically anything, breakfast, lunch or dinner!
