my daddy's energy bars

Picture
My Dad made first made these many years ago and sent them to us.

Now it’s a family tradition. This year, my nieces took over and made gobs of them for Christmas instead of cookies. My husband likes the manufacturing process--no hand dropping individual cookies onto myriad cookie sheets, and wrapping in wax paper is party of their charm.

My kids love these things, and have been known to eat them for breakfast. It has oatmeal and cereal in it, so I guess it's breakfast-ey.

2 cups oatmeal
2 1/2 cups Rice Krispies
1 block of margarine
1 10oz package of marshmallows
1 cup raisins
1 cup unsalted peanuts
1/2 cup smooth peanut butter

Heat oatmeal and raisins in the microwave for 1 minute on high. Stir in the Rice Krispies and peanuts. Set aside.
Heat margarine, peanut butter, and marshmallows in microwave for 3 minutes on high. Stir and heat for another 3 minutes or until melted.

Mix everything together. Spread into a 9 x 13 in pan and press evenly.

Cool and cut into bars.
