One of the cool things about starting Feeding My Ohana is that I am now getting some "broke-da-mouth" and word-of-mouth family recipes from my ohana to share.

This recipe is from my SoCal Aunty. I hardly saw her when I was growing up, but we are quickly becoming food and basketball buddies. Thank you Aunty!

1 1/2 cups sugar
3 cups flour
2t cinnamon
2t baking soda
1t salt (the white Morton girl with the umbrella kind)
3/4 cup oil
2 eggs, slightly beaten
4 cups Fuji or Honeycrisp apples, 
 cored, peeled and diced
1 cup chopped walnuts

Mix dry ingredients together.  Make a well and add the oil and eggs.  Mix well.  Add apples and walnuts; blend well.  Batter will be thick.

Preheat oven to 350 degrees.  Spray a 9 x 13 in pan with Pam.  Pour batter into pan and bake for 1 hour or until cake springs back when gently touched.  Serve warm or cool and enjoy!

NOTES:

1) This is a prime candidate for replacing oil with applesauce.
