magical self-separating finger jello

This is from my friend Alice. Mix everything together, pour it in a pan, toss it in the fridge, and somehow it magically forms two equal layers that holds its shape well, even in hot weather. Much sturdier and easier to make than layered jello, its thoroughly high-maintenance cousin.

3 small boxes of jello, or 
1 large box/6 oz and 1 small box/3 oz
3 packets of Knox gelatin

this allows you to hold the jello in your fingers
Pam cooking spray
3 cups boiling water
½ pint whipping cream, small carton

Spray a little Pam on an 11" x 11" or 9" x 13" Pyrex dish. Mix boxes of jello with Knox gelatin while dry because Knox gelatin on its own doesn’t dissolve easily – you’ll get unsightly clumps of not-flavored gelatin. Add 3 cups boiling water. It's best to add 2 cups first to make sure jello and Knox are dissolved and then add the remaining cup. Stir until completely dissolved.

Add ½ pint of whipping cream and stir (do not need to wait for jello mixture to cool). Pour into 11 x 11 (or 13 x 9) Pyrex dish and toss it in the refrigerator. The mixture will separate all by itself as it starts cooling
