kalua pig quesadillas

A good way to use leftover kalua pig. Because the meat has a strong-to-salty flavor, I like to pair it with a mild, creamy cheese like Monterey Jack, and a tropical fruit salsa or fresh corn salsa.

Leftover kalua pig
Flour tortillas

Shredded mild Monterey Jack Cheese
Shredded Lettuce or baby spinach
Tomato, chopped
Optional Condiments
Salsa (tomato or pineapple)
Laurie's guacamole

Cilantro

Warm tortillas on a flat non-stick pan. Layer cheese, kalua pig and a second tortilla. Flip when the bottom tortilla gets brown or the cheese starts to melt. Let the 2nd tortilla brown. Transfer to a plate and let sit for a couple of minutes.

Cut into quarters, top with condiments of your choice.
