laurie's chicken salad sandwiches

No one except me likes celery, so I use more cranberries and pecans. Flexibility is key in any recipe and you can adjust the proportions to your taste. This also works very well with leftover Thanksgiving turkey.

Another variation is to make this into a wrap with warm flour tortillas.

Leftover chicken (Costco or roasted) or turkey
Dried cranberries
Pecans or cashews, chopped and toasted
1 small stalk of celery, very finely chopped
Hawaiian salt, if necessary, to taste
Pepper, to taste
Mayonnaise

Mix everything together and add mayonnaise to hold it all together. Salt (if necessary) and pepper to your taste.

Toast your favorite bread and eat with lettuce and tomato slices.
