homemade granola mola

Granola is unbelievably simple to make, and another item well worth making from scratch, if nothing else for the satisfaction of "ha-ha-ha-I-can-be-the-Quaker-Oats-girl" 

The texture is crunchier and you don't end up with the 'granola powder' that inevitably shows up at the bottom of the box. This means one avoids the mental quandary of "Well, it's not really spoiled so I can't throw it out, but I know no one will actually eat it." Or perhaps this is just me.

1 canister of old-fashioned rolled oats
 (18.5 oz)
2 cups of unsweetened coconut flakes
2 cups of sunflower seeds,
  or 1 12-ounce carton of slivered almonds

Coating
1/3 or so cup canola oil
1/3 cup honey
1/3 cup maple syrup
1t vanilla
A bit of Hawaiian salt
Few handfuls of dried fruits (at the end)

Mix oats, coconut and sunflower seeds in a big mixing bowl.

Put oil, honey, maple syrup, vanilla, and salt into a small pot on low heat. All you really want to do it get to the point where it is a homogenous liquid. The heat helps dissolve everything and hold it into the oil. Do not boil it.

Line a baking sheet (make sure it has a lip) with parchment paper.

Pour the liquid into the oats mixture and stir to coat. Dump everything onto the baking sheet and bake at 300 degrees for about an hour. Check on it after about 30 minutes to toss and turn the mixture to make sure everything gets nice and golden brown. Take it out once everything is granola colored.

Let it cool and then add the dried fruit of your choice. Store in an airtight container.

NOTES:
1. I cut down on the on oil, honey and maple syrup and standardized to 1/3 cup for easy measuring
2. I used the entire tin of oats because otherwise you end up with a teeny bit of leftover oats. 
3. The original recipe asks for unroasted unsalted sunflower seeds but these were too hard to find. I used roasted unsalted ones instead. Steer clear of roasted salted nuts for this.
4. I doubled the original amount of coconut and sunflower seeds
