cornmeal fish

This was originally a catfish recipe, but I don’t  like catfish. Snapper or Petrale Sole work best, but it needs to sit in the milk. Otherwise, the fishy smell hangs in the air when you cook. Halibut and mahi mahi don’t smell as much, but it can be difficult to get thin fillets of these fish.

White fish fillets
  Snapper or Petrale sole, 
  very thin halibut or mahi mahi
1/3 cup of milk
1/3 cup cornmeal
About 1T paprika
Hawaiian salt and black pepper
Parsley
Fresh lemon
Olive oil

Soak the fish in milk (this helps reduce the fish smell). Mix cornmeal, paprika, salt, pepper, and parsley. Dredge fish in cornmeal mixture. Fry until golden. Flip once. Drizzle with fresh lemon juice.

Serve with My Daddy’s Tartar Sauce or Fresh Corn Salsa (pictured at left)
