coconut custard pie

This makes darn-near perfect coconut custard pie, and the crust forms on its own to boot.

I have no idea how this happens, but it works mysteriously, miraculously, consistently well. However, you must use Bisquick and a glass pie pan.

4 eggs
2/3 cup sugar
1/2 cup Bisquick
2 cups milk
1/4 cup margarine
1 cup grated coconut
(Use a little less sugar if you use sugared coconut.)
1t vanilla

Pour all ingredients into a blender and mix for 1 minute. Pour everything into a 10” Pyrex pie pan. Bake at 350 degrees for 50-60 minutes.

The top will turn golden brown and the crust will make itself. It's unbelievable, but it works.
