Truly an 'ohana' recipe, this my friend Dave's wife's mom's recipe. It's a Chamorro dish (native peeps of Guam) and we had it at a volleyball picnic one summer. Great to eat on its own or with tortilla chips. Go easy on the hot peppers if you don't want things to be too spicy. There are only guidelines on amounts--you know what tastes you like (more spice, less citrus, etc.), so adjust accordingly.

Squeeze lemons/limes and add to chicken. Mix chicken, grated coconut, salt and small onion, pressing the mixture together. Add carrots, green onions and jalapeno peppers. Mix well and let it stand about 30 minutes. Serve with tortillas.
