
With that out of the way, here's what's cooking this week.
Bonus Sunday
Macadamia Nut Brownies, Furikake Chex Mix and Coconut Butter Mochi. It was our turn to bring snacks for church.
It would be big-time bachi to provide an inadequate food supply, so of course, we bring too much. Lucky for us, these are our favorites!

Tofu and Broccoli Loco Moco. It sounds like a very bad idea, and the picture really doesn't do it justice.
However, roasting broccoli with sesame oil and hot pepper flakes is pretty darned brilliant. Add the hard tofu, a sunny-side up egg, a quick homemade teriyaki sauce, and rice.
It was really, really quite good. Recipe forthcoming last this week.
No leftovers and carnivore-husband approved!

Crock Pot Carnitas. Husband found yet another ono-licious way to thrown a pork butt in the crock pot and have something great turn out. Plus fresh salsa! Recipe also forthcoming this week.
Fish on Wednesday
Salmon Cakes, which uses the previously mentioned 'mayo'. We don't have leftover Easter salmon, so I'll probably just easy-bake a salmon on Tuesday.
Thursday
Sloppy Joes from Scratch. How did this fall out of the rotation?! Not exactly throwback, but we've missed this one for awhile.
Aloha Friday
Basil Chicken, another favorite from the archives! Just remember that the mint is very important to this meal.
