
Enter Pavlovas, about nineteen thousand times better in using the extra egg whites from the lemon curd. Pavlovas are fluffy bites of crunchy meringue/marshmallow. History has it that the dessert was created in honor of the great Russian ballet dancer Anna Pavlova on a trip to New Zealand sometime in the 1920s.
Fear not, those meringue-looking desserts. It's really not as hard as it seems. The elapsed time will be all afternoon, but for two hours, they are simply sitting in the oven (power off). So this would be a good time to take a nap, go running, or drop by yoga class.
We had them fresh, topped with berries and lemon curd. I'm pretty sure they would be good as an edible ice cream dish too.
For the orthodontically constrained, best to eat them fresh. Otherwise they get both too crunchy and two sticky, wires can be popped, and you will not be a very good role model.
One more thing to look forward to when the train tracks come off!
