Jammy Granola Shortbread is adapted from a Barefoot Contessa recipe. Ina Garten's recipes are easy to follow, use easily purchased ingredients, and just work really well.
Even when you change it up. I've made this with raspberry jam (per the original recipe), lilikoi jelly (which is FANTASTIC flavor, but a little too runny) and strawberry guava jam. The last variation makes it my unique riff. I'm also considering trying it with lilikoi or pineapple apricot jam for the next time. Jam not jelly. This is key.
This recipe is also very forgiving. Hypothetically, if you accidentally add an extra 1/3 cup flour, a dough ball will not form. Simply adding another 1T of butter snaps a sandy bunch of flour into shortbread dough. And no one will know the difference.
