
We had a Very Large Skinless Filet of Salmon from a Moms-Gone-Wild trip to Costco. When I came to my senses at home, at least I cut them into separate sized pieces and froze a bunch of them. Just in case nine people unexpectedly come to dinner.
A single filet is great for weeknight dinner.
About 10 minutes of chopping--potatoes, a zuke, a yellow pepper, two shallots and two cloves of garlic.
5 minutes to make the baking sauce
5-7 minutes to assemble and staple shut.
20 minutes to baking using partially frozen salmon. 15 minutes if the fish is fresh.
I thought the sauce was going to be way too strong, but the liquid from the veggies and salmon really mellow it out. The steam-in-a-bag also makes the potatoes nice and creamy.
