What's Cooking This Week--Hello Fall

I was at the Farmer's Market yesterday and  it feels like everything is in season. We can still enjoy the last bits of summer--tomatoes, zukes and berries, plus the great fall produce--apples, pears and kabocha. I'm in a soup and sandwich-ey  mood, so here's what's cooking this week.

Meatless Monday
My son's favorite Simplest Spaghetti with a side of farmer's market heirloom tomatoes and fresh mozzarella.This is a bread-less tomato sandwich.

Tuesday
Fall panini. Using Homemade Pork Sausage Patties. Defrost them and cook them.Then stack it on toasted sourdough with arugula, Havarti cheese and sliced pears. Finish them in the microwave for about 30 seconds, just enough to melt the cheese so that everything sticks together.

Wednesday
Dinner inspired by Mom. Braised Kabocha and My Mom's Miso Soup with an egg dropped in. Believe it or not, we might even get the first rain of the season.

Thursday
Another riff on fall panini, inspired by Ike's Sandwich Lair in Cupertino, CA. Roasted turkey (or possibly chicken) with fresh (traditional) cranberry sauce, havarti cheese, mayo and Sriracha. Why save cranberry sauce just for Thanksgiving?

Almost-Meatless Friday
Jane's Stuffed Zucchini and Roasted Broccoli with lots of garlic and a teeny bit of pancetta.

JapaDog party was loads of fun, and I'll post the popular combos later this week. Like any good potluck, we have a few leftovers. Thus, the success of this week's meals will be based on how many Tupperwares we empty by the end of the week. Here's what cooking with leftovers this week. 

Monday
Grilled Chicken Florentine Pasta, from Cooking Light
This was a quick, creamy bowl of ono, and a great foil to the JapaDog fest. The husband made a few changes, and it was yet another use for Costco chicken. Will post revised recipe this week. 1 Tupperware down.

Tuesday
Teriyaki Salmon and rice using the leftover Teriyaki Sauce from the JapaDog party. With leftover Lana's Coleslaw and Cool Corn Salad. Also posting this recipe this week. 4 Tupperwares down.

Wednesday
Chicken Divan, using the last of the Costco chicken. The children have requested broccoli. 1 Tupperware done.

Thursday
Katsu (using chicken) curry using the leftover curry sauce. Just thinking about this meal is making me happy. 1 Tupperware.

Nachos (tacos) with frozen taco meat. One of our friends brought over 
a Costco-sized bag of tortilla chips...so nachos to end the week. 
2 Tupperwares cleaned out.

Between dinners and lunch leftovers, this should get rid of a least 9 Tupperwares' worth of leftovers, and hopefully, no biological hazard waste.

What's Cooking This Week--Back on My Own

After two weeks of dine-out lunches and meandering about the San Francisco Bay area, Mom returned home to Hawaii. We sent her home with a suitcase full of Trader Joe's omiyage and a list of Korean tofu houses in Honolulu. 

Now, it's back on my own. Mom's not one for spicy food, so we're adding a little more pep. Here's what I am cooking this week. 

Monday
Orange Salsa Pork Chops, Okinawan Sweet Potatoes, rice, and curry-roasted cauliflower.

Tuesday
Shoyu Fish sandwiches and Spicy Asian Coleslaw. I bought purple cabbage because it was on sale. Pretty and lots of kick!

Wednesday
Lemon Arugula Pasta. With a nod to my stylish friend SZ, this is vegetarian but definitely not vegan.

Thursday
Spinach salad and Simply Ono Roasted Potatoes. Some recipes can be easily converted to vegetarian. Spinach salad is not one of them. Bacon is a requirement.

Friday
Tacos--No Mix, and my own Guacamole

Afternoon snacks for the ravenous teenagers
Berries are in peak season. Drizzled with yogurt and granola. I've also bought fresh tamales from Whole Foods, tortillas with shredded cheese and salsa, Kee Wah Bakery croissants and pork curry puffs, and yes, two bags of potato chips.

 After all, they are teenagers.

Let's hear it for Moms.  

My Grandma, Mom, Sisters, Aunties, Cousins, friends' Moms,  Nieces, Mother-in-Law, gal-pals--Be grateful to them all. For they have nourished/nurtured/advised/supported/encouraged and just-plain-loved you, physically and emotionally.

In honor of the amazing women in my life--heart-and-soul food

Grandma's Meat and Macaroni--my dear Japanese-speaking grandma, who never drove a car, and loved sumo and Las Vegas, made this thoroughly down-home American one-dish pasta meal.

Sanny's Hamburgers and Gravy--my sister is the master of "throw-stuff-in-and-I-think-it-will-work" cooking. Slightly crunchy on the outside but moist and full of complex flavor on inside. Add a sunny-side up egg and voila-ici, perfect loco-moco.

Mayonnaise Chicken--my mom's alternative to fried chicken. My Sister must have have learned a 'mayonnaise' secret from my Mom because the mayo in both my mom's chicken and my sister's hamburgers is what keeps each from drying out, but yet not greasy.

Grandma Nancy's Brownies--my mother-in-law's light, chocolate-y, just-sweet-enough brownies. It was her 'secret' recipe...but it's too good not to share :)

Anna's Broccoli Salad--from our very much beloved Anna, who was my daughter's day care provider. Everyone who has the good fortune of meeting Anna and her family became her family. Anna is the embodiment of ohana.

Karen's Mom's 7-Layer Bars & Jane's Napoleons--from the moms of two of my best friends in college. Thanks to them, I was never an 'orphan' during the Easter, Thanksgiving or the Jewish holidays.

What's Cooking This Week, aka How Many Things Can You Make with Costco Chicken?

We did the Costco run this weekend, and of course, picked up a chicken. It's the poultry equivalent of Mary Poppins' magic bottomless bag. One $4.99 Costco Rotisserie Chicken will fuel for 4-5 meals this week. 

Here's what what's cooking. I'm using up the orphans from last week. So we won't be wasting the rest of the cornbread from last week's chili, an errant red pepper, part of a humongous red onion, and the Costco-sized bag of broccoli florets.

Sunday--Pasta with Broccoli, Sun-Dried Tomatoes and Shredded (Costco) Chicken, as made by the husband. This is not a new recipe, but an unfortunate "I forgot!" so look for a tardy posting later this week.

Monday--Costco chicken with Cornbread Stuffing (using the previously noted leftover cornbread), roasted broccoli w/garlic & pancetta, and Okinawan sweet potatoes. I might even make some gravy. The all-oven meal.

Tuesday--What Started Out as Tyler Florence's Pork Chops. There is no picture of this, and we haven't had it all winter yet.

Wednesday--Sweet and Sour Chicken, Yaki Musubi and Tangerine Spinach, Take 2. I'll use Drumettes here.

Thursday--BBQ (Costco) Chicken Pizza, with red onions and extra red peppers from last week's fruit salsa.

Friday--(Costco) Chicken Divan, using the rest of the Costco broccoli.

Saturday--Nachos with Spanish Rice, Warm Jalapeno Cheese Sauce, Guacamole and yes, if there is any more of it, the rest of the Costco Chicken.

I Finally(!!!) Learned How to Stir-Fry

Until last Thursday, I really stunk at stir-frying. Over-cooking, under-cooking, too much salt, adding water at completely inappropriate moments. I was a disaster.

While it was definitely not a religious experience, I am definitely cured and converted. How did this happen? 

Technique is everything. Unlike soup or oven cooking, which tend to be far more forgiving with cooking time, stir-frying is very fast and simple, but you have to pay attention. Or as my husband says, "Focus, for once." 

He's right. And it worked. 30 minutes, start to finish. Dinner was finished before the rice was cooked. Click here for the recipe.

    I love to eat, so I had to learn to cook. This is my personal reference and I use it daily. Looking forward, when I turn a profit, 95% of net profit will go to programs to feed the hungry.
