Two Non-Sequitur Recipes

I've been traveling quite a bit lately--to New England, Washington DC, and LA. Thus, a lot of eating has been going on, but not necessarily a lot of programmatic cooking. These two have been well-used lately.

ALL PURPOSE SMOOTHIES
I have settled on an all-purpose smoothie as my consistent work-day breakfast. Two cups go to work Monday through Friday. One with hot milk for making coffee at the office. 

The other is the "Who needs to spend $5 on JambaJuice" smoothie that I manage to make in the morning, and still get to work on time. And then the "second shift" of either husband or birdie has the other half.

One important caveat on the aesthetic of a slightly less than freshly-made smoothie. If you store the second serving in the fridge, it will separate and look really quite gross after a couple of hours. IT IS STILL TASTY! Simply give it a good stir. Close your eyes if you must, but trust me, as long as you have it within the same day, it will be yum. Click here for recipe.

JANE'S BAKED SCALLOPS
My New England (Mass and RI) ohana is simply awesome. As much as I would love to, I cannot eat lob-stuh, due to food allergies, Jane's Baked Scallops give me that seafood fix in a simple, comfort-food fashion.

Experiment Tuesday--Salmon in a Bag...WORKS!

Salmon in a Bag is a keeper.

We had a Very Large Skinless Filet of Salmon from a Moms-Gone-Wild trip to Costco. When I came to my senses at home, at least I cut them into separate sized pieces and froze a bunch of them. Just in case nine people unexpectedly come to dinner.

A single filet is great for weeknight dinner. 
About 10 minutes of chopping--potatoes, a zuke, a yellow pepper, two shallots and two cloves of garlic. 
5 minutes to make the baking sauce
5-7 minutes to assemble and staple shut.
20 minutes to baking using partially frozen salmon. 15 minutes if the fish is fresh.

I thought the sauce was going to be way too strong, but the liquid from the veggies and salmon really mellow it out. The steam-in-a-bag also makes the potatoes nice and creamy.

What's Cooking This Week--Finding the Summer Groove

We've been doing a lot of work drought-proofing the yard, so cooking has been spotty, but we are almost done, and it's time to get back to cooking and bringing back the summer recipes!

Pasta on Sunday
Carbonara Hironaka. Using traditional bacon. The Japanese char siu is physically gone, and we are still exercising it away.

Monday is #MeatlessOneDay 
Summer Soba Salad for 95-degree weather. No cooking allowed. We may even skip boiling the soba or make it on Sunday.

Experimental Tuesday
Salmon Pouches, take 2. The household is a little skeptical based on the epic failure of Salmon Couscous (among others). But we have a literal boatload of Costco salmon, so it's salmon, shallots, potatoes, zucchini and this time, No Substitutions.


#LeftoversRoulette Wednesday
Kalua Pig Sliders, using the mini King's sweet bread rolls and kalua pig that we froze a few weeks ago with Tropical Fruit Salsa to balance out the salty/sweet equation

Experimental Thursday
Halloumi salad. I had this when I was in Israel, and found Halloumi cheese at the new, slightly-fancy-but-still-not-too-snooty market. Halloumi is a really sturdy cheese that you can fry or grill and I don't think I can mess up lettuce, cukes, tomatoes, maybe an avocado and some small pickles.

Aloha Rhode Island Friday
Dinner with love from my Rhode Island ohana. Baby scallops baked in butter, breadcrumbs and a bit of green pepper and Jane's Stuffed Zucchini! We have the first ginormous zuke of the season waiting for this.

Hello Summer Extras
Homemade Granola Mola
We haven't bought granola since using this recipe. It's easy, ono and way less expensive than box granola.

Sour Cream Blueberry Muffins
It's berry season!

Homemade raspberry sorbet (see above)
This is multi-day experiment with a new toy we received for Christmas.

Blackberry or Darjeeling sun tea, because orthodontia and carbonated beverages are a Big No-No-No.

Goat cheese and lots of crackers
