What's Cooking This Week--Husband Cooks!

PictureOK to eat cold. Way better grilled!
It's been a hectic couple of weeks and summer meal planning always gets a little bit ad-hoc. Lately, the husband has been cooking quite a bit (Thank you!!), so here's what he is making this week.

Meatless Monday
Tofu Steaks. Easy to grill. Best of all, tofu means that you can use marinade as dipping sauce too!

Tuesday
Myles' Last Resort Meatloaf. We forgot shredded carrots, so the husband is adding a jalapeno pepper instead.

Wednesday
Chicken/broccoli/sun-dried tomato pasta with parmesan cheese. This is a very simple, toss-it-all-together and not really need a recipe kind of dinner.

Meatless Thursday
Summer Soba Salad. No cooking required again when the weather heats up.

Friday
Tonkatsu. Rice. Salad. Nearly a plate lunch. Make sure you have lots of Bulldog sauce.

Blueberries are in season! Sour cream blueberry muffins. Please note that 450 is indeed the right temperature for baking. A friend of mine thought that surely this was a typo, but high heat is required.

The kids also made blueberry pancakes and we had yet another cobbler.

I assure you it is not. 

I paid money for this drink. Twice. And enjoyed it. 

But I admit I was Very, Very Skeptical the first time.

The individual ingredients are all very ordinary and taste fine by themselves.

I will even try to make it at home for the family this week.

There are 5 ingredients in it. Any guesses?

What's (Been) Cooking This Week--Relatives' Choice!

We have LOTS of relatives visiting. Like the rest of our family, they are very opinionated on what they want to eat and do when they are here. Our (mid)-weekly menu reflects this.

Monday
Any Kine Quiche, with bacon, spinach, onions, mushroom, gruyere and a smattering of very sharp cheddar, as specifically requested by my sister. Plus Furikake Kale chips.

Tuesday
Curry House. Requested by recent high school graduate. Rest of the ohana was also very happy. Un-curry dishes are also quite good.

Wednesday
Carbonara Hironaka, requested by the constantly hungry faction of the household, who can eat carbs and suffer no consequences.

Thursday
Marie Callender's, answering a request for "American Food." Marie Callender's opened and closed in Hawaii, and never gained the popularity of the longstanding Anna Miller's. Satisfied the pot pie craving.

Friday
Purist Steaks, by request of the carnivorous segment of the household. Grilled with garlic, Hawaiian salt and pepper. Those who hold cow sacred are eating elsewhere on this day.

What to Bring Back? Snacks

Hello Summer! Whenever we go to Hawaii, we always bring some of our favorites back. Some for us, and more for our friends. Here is a short summary:

Toffee-covered, chocolate macadamia nuts. 
Island Princess, we love you. This is the most requested and most appreciated item. Why? They are:

1) Powdered-sugar dusted 
2) Toffee-coated 
3) Chocolate-covered 
4) Macadamia nuts

What's not to like?! Typically, we use these  as gifts, but we do save a package (or two) for ourselves.

Hawaii Hello Kitty Crackers
While these are no different from any Japanese crackers on the Mainland, the sheer variety and availability of Hello Kitty cuteness foods is simply bigger in Hawaii. 

I picked these up at Don Quijote, or the equivalent of Safeway in Hawaii. You can find these at Long's Drug's in Hawaii as well.

Peanut Sesame Candy from Chinatown
Eating these means that your dentist is going to be getting a fancy new car by treating your mouth. They are slightly sweet, chewy, sticky sesame seeds-stuck-in-your-teeth goodness.

Traditional Chinese peanut variety and also macadamia nut variety. 

My cousin's wife and one of my clients love this stuff. And so do we.

Coconut Senbei from Fujiya Bakery
Fujiya Bakery is a long-time Hawaii Bakery well-known for all manner of mochi and manju that they offer.

My dad's favorite peanut butter mochi is from here, but what we like to take back are the coconut, pineapple-coconut or macadamia nut wafer cookies. It's snap-crackle-pop crunchy--think of them as the same crunch of fortune cookies, but flat and flavored.

Available at Shirokiya, the Fujiya factory in Kalihi and Long's Drugs. This is something you want to hand-carry.

While one can't bring back the beach, shave ice, malasadas or haupia sweet-potato pie, these are some nice bring-backs to keep your Hawaii groove going a little longer.

My relatives are visiting! This means Ani's Sweet Bread, a new stock of li-hing powder, coffee, macadamia nuts and rock salt plum are on their way too. 

All in return for shopping trips to Trader Joe's, Whole Foods and JC Penney's. 

So here's what I think we're eating, subject to relatives' OK.

Meatless Monday
Mom's miso soup and tofu. Light yet filling and comforting. Just like home!

Leftover Tuesday
Huli-Huli Chicken. We made a batch of this over the weekend and will take advantage of leftovers today.

Soup on Wednesday
PDQ Hot and Sour Soup. As requested by one of the teenagers.

Almost Meatless Thursday
My Daddy's Killer Fried Rice. With the last bit of char siu (not chashu).

Family Friday
TBD, depending on what Mom, Aunty, Mother-in-law, sister or children determine. Should be fun and guaranteed to be good!
