Feeding the Teenagers

PicturePrep for the boys
My job this weekend was to feed them in a not-fast food way.

So what does $70 buy? Rather than 4 takeout pizzas, it buys enough for a big pot of chili, a double batch of guacamole, and a package of corn tortillas for homemade tortilla chips to feed the boys.

Plus enough for a replacement bag of butterscotch chips, stock-up on chili powder and cumin and a bunch of peonies for myself.

PictureA clear sign they are still alive.
But of course, teenage boys eat junk food.

The other boys were kind enough to bring a variety of drinks, cookies, brownies and chips. What fun is a sleepover without it?

But with the leftover chili and guacamole, at least they see a glimmer of the value of homemade.

PictureOno!
And if that didn't convince them, I made this for myself--the all-homemade nachos platter. OK, I didn't make the cheese myself, but you get the idea.

Enjoy the long weekend and honor Memorial Day.

What's Cooking This Week? Do Not Try This at Home

PictureStill too much of a good thing
Last week, we learned that takeout every day is a bad idea. It gets expensive and at the end of the week, even only eating half-portions, I was feeling a little Morgan Spurlock-ian.

This led me to ponder how often Americans eat takeout in a week. Based on a Pew Research survey, 78% eat out at least once a week. What?! So here's really what we ate, and not cooked.

Fundraiser Sunday
Mountain View Buddhist Temple Teriyaki Chicken. A bargain with nearly a whole chicken and perfectly cooked white rice. The closest thing to home cooked all week.

Meatless Monday
Guacamole, salsa and roasted zucchini. Made by the teenagers.

Pizza Tuesday
Amici's Milano and Boston pizza with a bag of salad.

Tofu Hotpot Wednesday
Kong Tofu. Bibimbap and spicy tofu hotpots. With lots of leftovers for lunches.

Old-people volleyball Thursday
Marie Callendar's. The rec league is recognizing our team for being either the oldest team, or the "longest tenured team." We've gotten to the point where the reason we play is to go to Aunty Marie's apres-match.

Detox Friday
You can only eat out so much, even with variety. Like Dorothy said, "There's no place like home."

Carnitas and Tofu Loco Moco!

PictureDinner today, leftovers for next week!
Pork and the crock pot were simply made to be friends. Very, very good friends.

Crock Pot Carnitas is another dump-and-ignore crock pot genius.

Click here to make it this week.

The next one will take some convincing, but be assured that there were no leftovers on Tofu Broccoli Loco Moco.

As a bonus, the idea of spicy roasted broccoli all by itself has many possibilities too. Click here for the recipe and assembly.

Hope everyone had a Happy Mother's Day!

What's Cooking This Week--Cinco de Boys Day

PictureFor my favorite boy!
Mixed plate menu with Cinco de Mayo and Boys Day both on the fifth day of the fifth month. Please note "Mayo" is not to confused with "mayo" that you put in macaroni salad among other things.

With that out of the way, here's what's cooking this week.

Bonus Sunday
Macadamia Nut Brownies, Furikake Chex Mix and Coconut Butter Mochi. It was our turn to bring snacks for church.

It would be big-time bachi to provide an inadequate food supply, so of course, we bring too much. Lucky for us, these are our favorites!

PictureTofu Broccoli Loco Moco. Ugly but Yum.
Meatless Monday
Tofu and Broccoli Loco Moco. It sounds like a very bad idea, and the picture really doesn't do it justice.

However, roasting broccoli with sesame oil and hot pepper flakes is pretty darned brilliant. Add the hard tofu, a sunny-side up egg, a quick homemade teriyaki sauce, and rice.

It  was really, really quite good. Recipe forthcoming last this week.

No leftovers and carnivore-husband approved!

PictureCrock Pot Carnitas. Keeper!
Seis de Mayo Tuesday
Crock Pot Carnitas. Husband found yet another ono-licious way to thrown a pork butt in the crock pot and have something great turn out. Plus fresh salsa! Recipe also forthcoming this week.

Fish on Wednesday
Salmon Cakes, which uses the previously mentioned 'mayo'. We don't have leftover Easter salmon, so I'll probably just easy-bake a salmon on Tuesday.

Thursday
Sloppy Joes from Scratch. How did this fall out of the rotation?! Not exactly throwback, but we've missed this one for awhile.

Aloha Friday
Basil Chicken, another favorite from the archives! Just remember that the mint is very important to this meal.

Have a good week all!

    about

I love to eat, so I had to learn to cook. This is my personal reference and I use it daily. Looking forward, when I turn a profit, 95% of net profit will go to programs to feed the hungry.
