The original Cooking Light recipe says, “peel and section grapefruit.” Have you ever tried peeling a grapefruit?! I really don’t think grapefruits were meant to be peeled.
Instead, I prepped the grapefruit as I would have for breakfast and then squeezed out the juice to make the dressing. As a bonus, the grapefruit pieces turn out to be exactly the right size for getting a bit of fruit, lettuce, cheese and walnuts.
