almond float, updated

Any Hawaii or ex-pat Hawaii person know Almond Float. White almond-flavored jello swimming in Del Monte canned fruit cocktail. Admit, you liked it, and always tried to pick out your favorite fruit, and the lone cherry of the can.

Well, this was long due for an update. This is a fresh update to an old island-style favorite. Toss out your canned fruit.

Almond Float Part
1 envelope unflavored gelatin
1 1/2 cups water
1/2 cup evaporated milk
1/2 cup sugar
2t almond extract
Suggested Fruit Add-ins--the first 3 can be used separately or together
Fresh strawberries, hulled and sliced in half
Mangoes, cubed
Starfruit, sliced to look like stars

Mandarin Oranges (OK, these can be canned), or fresh orange slices

Soften gelatin in 1/2 a cup of water. Heat milk, sugar and 1 cup of water to boiling point. Stir in gelatin/water until completely dissolved. After cooling, stir in almond extract. Pour into an 8" x 8" pan and refrigerate to harden. Cut into 1" squares when hardened.

Spoon almond float into a bowl. Add strawberries, mangoes and starfruit and toss gently. You can also use just one type of fruit if you like.
