          warm ginger chicken apple salad

          This recipe started out as "Sesame Steak Salad with Asian Pears." When I found this recipe, I had to  work around a few things. 1. In general, my son doesn't eat cow. 2. Asian pears were not in season. 3. It was 4 pm and everyone was getting hungry and cranky.

          Desperation, er, improvisation took over, and we ended up with a keeper.

          1 package of boneless/skinless chicken thighs, cut into bite-sized chunks

          Marinade for chicken

          1/2 of a honeycrisp apple or nashi (Japanese pear), shredded
          1/4 cup mirin
          About 1T of fresh ginger, finely chopped
          2 cloves of garlic, finely chopped
          Juice of half of lime

          3T shoyu
          1T sesame oil
          Dressing
          Juice of the other half of a lemon
          2T Japanese vinegar
          2t fish sauce
          1T sesame oil
          Roasted sesame seeds (optional)

          Lettuce
          3-4 radishes, very thinly sliced
          1 1/2 honeycrisp apples or nashi, peeled, cored and thinly sliced

          Mix marinade for chicken and let chicken marinate for at least 30 minutes. Mix together the dressing. It will taste very sour and salty, but don't worry.

          Stir fry the chicken until done and the apple bits are beginning to carmelize. Toss lettuce, apples and radishes together with the dressing. Toss in hot chicken and eat.
