ung choy with shoyu-mirin sauce |

1-2 bunches of ung choy
(Or choy sum, mizuna, watercress or American spinach) 1t sesame oil |
1T shoyu
2T mirin 1t oyster sauce 1/2t sugar |
Boil water and add 1t sesame oil. Drop in ung choy for 1 minute, or until it is just wilted. This will happen faster with spinach. Rinse and drain with cold water. Squeeze out excess water. Bundle them up and chop into 2-inch segments. Mix sauce ingredients together and pour over.
