quiche (any kine)

Just like Pillsbury Manapua or panini, quiche is a very forgiving dish and full of variations that will work for anyone's particular taste or mood. Pie crust, eggs, a little cream, cheese of your choice and the rest is up to you.

We also tend to weigh ingredients toward the 'fillings' part, especially the vegetables, using meat (usually sausage or bacon) in scant amounts, just enough to flavor the vegetables.

Here are some combinations we favor:
1) Sausage, mushrooms, onions, spinach and gruyere/swiss cheese.
2) Sausage, mushrooms, shallots, zucchini and provolone/mozzarella
3) Onions, mushrooms, zucchini, red pepper and jalapeno jack cheese
4) Red pepper, artichoke hearts, zucchini, onions and colby/jack mix

NOTE: This recipe below makes 2 sausage, mushroom, onion and spinach quiches. Make a double recipe to use all the fillings in one baking.
2 9-inch pie crust (not the graham cracker variety!)
6 eggs
About a half cup of half-and-half or milk (any except non-fat)
1/2 package of Jimmy Dean pork sausage
--Cut it in half, freeze the other half
About half cup of shredded gruyere cheese
About a half cup of shredded Swiss cheese
A bit of olive oil (if only vegetables)
1 carton of your favorite mushrooms, thinly sliced.
1 onion or 3-4 shallots, thinly sliced
About 1/2 bag of fresh baby spinach

Hawaiian salt and pepper, to taste

Add the sausage to a pan, and break up to cook. If you are not using a meat product, add a little olive oil before you add the vegetables. Add onions, mushrooms and spinach, in that order, and cook until done. Set aside and let it cool a bit.

Scramble eggs and add half-and-half or milk. Mix in cheese.

Split the filling between the two pie crusts and spread evenly. Pour the eggs/cream/cheese mixture over the quiche. *DO NOT* fill to the top because it will spill over and create a huge mess in your oven. Bake at 350 for about 45 minutes. The crust should be nicely browned and the top should be solid, slightly brown, puffy and only a bit jiggly. Let sit for about 10 minutes before cutting.
