peach blueberry cobbler

Found this just this summer. We (OK, my daughter and my husband, who are the resident bakers) have made it four times as a breakfast dish, though it would be sublime as a dessert with vanilla ice cream. Twice with peaches, once with nectarines and once with apricots. In all cases, it was gone by the end of the day. My cyber-ohana has also weighed in big-time happiness on this one as well.

It's the best of everything about summer. As long as we can keep getting fresh stone fruit, I'll keep asking them to make it.

4T butter
3/4 cup flour
3/4 cup sugar
3/4 cup milk (non-fat is perfectly fine!)
1t baking powder
1/4 t salt
3 big peaches or nectarines, 4-6 apricots, pitted and sliced (skin on is OK)
1/2 small carton of blueberries

Melt butter into 8 x 8 baking dish. Mix dry ingredients and add milk. The batter will be *very* runny, but don't worry. Pour batter into baking dish and scatter the fruit into the batter. It will look like a mess, but don't despair. Bake at 350 degrees for 50-60 minutes. As if by magic, the top will be sticky-crunchy and the bottom will be warm and buttery.
