maple streusel apple pie

I tried a few recipes using maple sugar, and this is the only one I've decided to add to Feeding My Ohana. Because maple sugar is pretty expensive compared to 'regular' sugar, I wanted to make sure that the maple taste was worth the effort of finding and paying for it. In this recipe, I think it is.

Todd's pie crust

Streusel
1 cup flour
1 cup maple sugar
7T unsalted butter, cut into 1/2" cubes
A bit of kosher salt
1/4 cup maple sugar
2T lemon juice
1t vanilla extract
1t coriander
1/4 t allspice
A bit of kosher salt
6-7 apples--Jonagolds or Granny Smith (i.e, baking apples)

Make Todd's pie crust and set it in the fridge. For streusel, Combine flour, maple sugar and salt. Rub butter in until you form little clumps. Set 1/4 of the streusel aside to use in the filling. For apples filling, mix maple sugar, lemon juice, vanilla, coriander, allspice and salt. Toss in apples and the 1/4 of the streusel that you already set aside. Let it sit for about 15 minutes.

Put the uncooked piecrust in a pie pan. Pour filling in, and sprinkle the rest of the streusel over. Bake at 400 degrees until the apples are tender and the streusel is golden--about an hour. Serve with maple whipped cream or ice cream.
