li-hing apples

Li-hing mui is a dried, sweet (mostly salty) plum that is popular as a snack food in Hawaii. The red li-hing powder has been made popular and has made its way into everything from Alan Wong's signature dishes to popcorn and shave ice flavors (see Baldwin's). This is a ridiculously simple riff on cinnamon apple slices. 

Just take a very a light touch with the li-hing powder.

Fresh apples, honeycrisps, fujis or galas

Slice, peel and core apples. Using a very small amount of li-hing powder, lightly dust the apples using a very fine sifter (as you would for powdered sugar). Let the powder set into the apples for a few minutes and eat.
