          lemon bars

          One of my dear friends not-so-gently reminded me that I needed to add this one. This is probably Todd's most-requested baked item. It started out that we would beg our friends for lemons for cooking, in return for lemon bars. 

          So here it is, of course with a Hawaii-girl slant: macadamia nuts in the crust.

          Crust
          1/2 cup powdered sugar
          2 cups flour
          2 blocks of butter
          A few handfuls of macadamia nuts or pecans, chopped
          Filling
          4 eggs
          2 cups white sugar
          4T flour
          1/2 cup lemon juice
          Grated rind of one lemon

          Mix crust ingredients together and press into the bottom of a 9 x 13-inc pan. Bake at 350 degrees for 20-25 minutes, or until very lightly browned.

          Beat filling ingredients together. Filling will be runny. Pour onto the top of the baked crust. Bake for 15-20 minutes at 350 degrees. Cool completely and dust with powdered sugar.
