In our house, “meat” usually means pork, lamb, ground chicken or turkey, sausage and Spam. Yes, really, Spam. Spam has exalted meat status in our home, saved for ‘special’ occasions. Anyone with ties to Hawaii understands this. For the uninitiated, the first thing to know is that you MUST cook Spam, and I repeat, MUST cook Spam.
