crock pot carnitas

Found this from Simply Scratch, a great place for sensible mostly-from-scratch recipes.
The one thing to remember is that the jalapenos and onions and oranges in the crock pot are not for eating afterwards. I tried to eat all the nice-looking, nice-smelling spices. Ptooey! It has a weird bitter flavor. Stick to the pork.

Salt and pepper the pork butt. Mix olive oil cumin and oregano in a small bowl. Best to use a small whisk if you have one. Coat the pork with the spicy oil, and drop it into the crock pot.
Toss in the onions, jalapenos and garlic. Cut the orange in half, squeeze the juice over everything and then toss the wrung-out oranges into the crock pot too.
Cook on high for 6 hours or low for 8-10. This is the exact same cooking direction as Kalua pig.
Right before eating, use a fork to separate it out, and be careful to avoid the orange peels and jalapeno. (The onion and garlic will have dissolved).
Coat a pan with canola oil and make sure it's hot. Toss some of the meat into the hot pan to get a little crust on it.
Eat with corn tortillas, shredded cabbage and fresh salsa. This makes a lot of pork, so there will be plenty of leftovers.
