My lovely friend from Canada (yes, the one who is a Calgary Flames fan), brought this to our most recent Christmas party. The texture that the cereal adds to the biscotti is lovely. Crunchy, but not so hard as to require dunking (or cosmetic dentistry).
Snowman plate optional, but it does make you happy just to look at it. I got mine at Target a few Christmases ago. |
2 cups flour
1 1/2t baking powder 1/4t salt (the Morton kind) 1/2 cup of butter (1 block) 3/4 cup sugar |
2 eggs
1t vanilla (don't use imitation) 1 1/2 cup Post Selects brand Cranberry Almond Crunch cereal, crushed fairly fine. Crush first, then measure. 1 cup dried cranberries |
Mix dry ingredients together (flour, baking powder, and salt). Cream butter and sugar together til light and fluffy--best to use a mixer for about 3 minutes. Add the eggs, 1 at a time and vanilla. Gradually add in the dry ingredients. Stir in cereal and dried cranberries.
Wet your hands a bit before working with the dough. Divide dough into 2 equal portions and shape into logs about 14" long x 1 1/" wide, on a greased cookie sheet or silpat.
Bake 25-30 minutes at 325 degrees. Take out and put on a cutting board. Cool 5 minutes. Using a serrated knife, cut diagonally into slices about 3/4" thick. Put them upright on a cookie sheet, about 1/2" apart and bake for about 20 more minutes, but at 275 degrees. They should be a bit dry.
Cool on a wire rack. If you want to be really fancy, drizzle with melted chocolate or powdered sugar. However, they taste great just as they are too.
