summer winter wheat berry salad |

No one ever goes hungry at our 4th of July potlucks. And we all come away with new recipes. This is from my fried Christine, of Christine's Clam Chowder fame.
A hearty, flexible grain salad, similar to quinoa salad. Wheat berries are almost like barley, but have a good texture to them. Christine says as a recipe, it's a little 'loosey-goosey' and typically, she uses whatever happens to be on hand. These are the best kinds of recipes. |
1 cup winter wheat berries, available at Safeway
3 cups water 1 can of corn 1/4-1/2 cup craisins or diced tomatoes 1/2 cucumber, seeded and diced 1 can black beans, rinsed and drained |
4 oz. feta cheese
1/4 cup roasted sunflower seeds Red or green onion, finely diced/sliced Your favorite vinaigrette dressing Italian parsley, chopped |
Cook the wheat berries in 3 cups of water for 1 hour. Drain and cool. Add all other ingredients. Done!
Mexican variation
Swap cilantro for parsley
Swap salsa for vinaigrette
Swap Pepper Jack for feta
Add diced avocado tomatoes right before serving
