cheryl's pineapple muffins

This is actually from Cheryl's mom, and yes, she said it was OK to post it.

This is an example of my husband's favorite kind of recipes: Less than 10 ingredients, 2 prep dishes (bowl #1 and bowl #2), mix, dump in pan and bake. Get results like it took you all day and bask in the adulation.

1 cup of white sugar
1 block of butter
2 eggs, beaten
1 can of crushed pineapple (8.5 oz)
2 cups flour
1/2 t baking soda
1t baking powder
1/2 t white salt (the Morton Girl kind)

In bowl #1, cream butter and sugar. Mix in eggs and crushed pineapple.

In bowl #2, sift together flour, baking soda, baking powder and salt. Mix dry into bowl #1. Bake in a greased muffin pan at 350 degrees for 25-30 minutes until a toothpick comes out clean, and the top is a beautiful golden yellow.
