Who knew granola was nothing more than baked oats?! Take a can of this (see left). Old fashioned rolled oats. Use the whole container.
The recipe calls for unsweetened flaked coconut, coated in canola oil. Baking coconut flakes could literally be a recipe for disaster.
But it was too easy not to try.
And the results were very tasty. More importantly, I didn't set a fire in the oven this time.
Our version is coconut, sunflower seeds and dried raspberries.
Next time, maybe cinnamon, dried apples and pecans. The mixture of oil, honey and maple syrup is really all you need to flavor the granola. Then add whatever nut and dried fruit strikes your fancy.
