One of the first Feeding My Ohana collaborations--with thanks from RussB, whose suggestions filled out the flavor and more 'oomph.' I would have never thought to add mint to "basil" chicken!

Cut raw chicken into bite-sized pieces. Mix together shoyu, cornstarch, fish sauce, sugar and water. Marinate chicken pieces and let it sit for 30 minutes or so.
Swirl a bit of oil in a wok. Add the shallots, jalapeno and garlic and cook until you can smell it. Add chicken and cook until just done. Add red peppers and cook until those are just done. Add in basil and mint and serve immediately over jasmine rice
