Church picnics and bake sales bring out the best home cooking. Last weekend, the Buddhist church we go to held a bake sale. That saying, "Never go shopping when you're hungry" should be amended to say, "Never go to a bake sale before lunch, especially if they are serving coffee."

After much sampling (in the guise of 'market research'), I hit the flavor/ease jackpot with pineapple muffins. It's a recipe from another transplanted Hawaii girl, and she got it from her mom, who still lives in Hawaii. They are light and fluffy and the pineapple gives it just the right amount of 'oomph'.
