Cows will not be sacred this week. My son, who doesn't eat cow as a lifestyle choice, has educated us. We rarely eat beef. However, he is on a school trip. While I miss him dearly, much more than say, his older sister does, we will console ourselves with beef. Here's what's cooking this week.

Monday
Korean Egg Meat JunMy Mom's Japanese Coleslaw and hot rice. I don't have enough time to make Macaroni Salad, otherwise, this would be a pretty fair plate lunch dinner.

Tuesday
Salt and Pepper Shrimp, green beans, Okinawan sweet potatoes and rice. Day 1 prep for Beef Barley Soup/Stew

You didn't really think we would eat beef every day did you?! Even the steak-loving husband has limits.

Wednesday
Beef Barley Soup and Fluffy Wheat Bread because it's supposed to rain, rain, rain. Perfect soup weather.

Thursday
Chicken Piccata, mashed potatoes and broccoli. Fresh lemons from my neighbor work well. This may turn into Fixed Lemon Chicken, depending on how I feel. I may even feel like a cheeseburger from In-n-Out.

Friday
Christine's Clam Chowder and the rest of the bread. Fish on Friday, more or less.

Please note that this is a one-week cow-feasting anomaly. I do not advocate eating this way as a normal routine. I'm grateful and proud that my son has steadfastly stuck to his no-cow commitment.

Our beef consumption dropped way down based on 2 demographic segments in the household.

1) Except for the occasional In-n-Out Cheeseburger, I don't care for red meat, and
2) Ever since returning from a school camp a few years ago, my son has decided not to eat cow.

We are not hard and fast, and the remaining demographic household segments have no problem with cow consumption. But since I cook most of the time, I am the 'decider'.

But this week, the cow is no longer sacred. It's time for a good grilled steak. Here's what's cooking. Be assured that no beef will be left at the end of the week.

Monday--Grilled steak, Cherry Salad and rice. Cherries are in season and the bleu cheese in the Cherry Salad will play quite nicely with the steak. Ribeye or a good T-Bone makes the meat eaters happy.

Tuesday--Tofu-tuna salad. The Yang to Monday's Yin meal. No cooking and the only red is from the tomatoes.

Wednesday--Asian-style steak sandwiches. Slicing the leftover steak really thin, tossing some carrots, red peppers and bean sprouts with some Asian sesame dressing, on a nice crusty French roll. RIP cow.

Thursday--Teriyaki chicken, rice and a green salad

Friday--Quick pasta salad for a meatless meal.

In our house, we eat what we like, but moderation rules the day too. Eat Well. Be Well.

 
 
It's 'cold' in the Bay Area again. It's even raining, perfect weather for some hearty stew/soup items. This is also a great way to use a use a single bunch of celery and a bag of carrots in a week without them wilting. I will also get some naan flatbreads and a tub of feta cheese to split between two meals.

Monday--Japanese Chicken Curry using Vermont curry instead of S&B packet this time. Uses half of the carrots and celery. Leftovers for this will be used in lunches during the week.

Tuesday--Grandma's Braised Meat. Because we need a red-meat fix every once in awhile. And I don't have a photo. Finish off the other half of the carrots and celery. 

Wednesday--The experiment of the week: another "Arabian Night"-spiced chicken with Steve's hummus. Plus a new recipe for baba ghanouj (an eggplanty-dip/spread) and Greek Salad. This should just about use all of the extra lemons. As we watch the hockey game. Go Sharks!!

Thursday--Simple Spaghetti and a green salad. Something fast for the triple-bonus carpool day--piano, soccer, volleyball.

Friday--Tandoori Chicken Sandwiches. This will use up any leftover feta cheese and flatbreads from Wednesday's dinner.
